Mother's Day will soon be here. If you are still wondering what to do on her special day, why not make a healthy and delicious raspberry salad dressing! It is very simple to make. It is a wonderful gift idea when it is added to a nice gift basket. Present it in a glass pint jar secured with a leak-proof lid.
Low-glycemic Raspberry Vinegarette
1/2 cup oil (neutral flavor)
1/4 cup raspberry seedless fruit spread (sugar-free)
1/4 cup white wine vinegar (or neutral flavor)
1-2 tablespoon maple syrup
Sprinkle salt
Sprinkle pure stevia (optional)
1/4 onion powder (omit for fruit dressing)
Blend all ingredients with whisk or blender. May need to use blender if fruit spread is thick. The onion powder is a nice flavor when added to a lettuce salad, but would not be good in a fruit salad. Salad ingredient ideas: choice of greens, shredded carrots, fresh raspberries or cubed apple and sunflower seeds. Proteins can also be added to make a nice light lunch.
