If you are looking for a delicious and quick recipe for your 4th of July picnic or when you don't want to turn on a hot oven, here is a wonderful cold chicken salad recipe with lots of flavor. It is a great away to use up leftover chicken or turkey. If you don't have leftovers, a rotisserie chicken from the deli is a great option for when you do not have time or want to cook. This chicken salad can either be eaten as a sandwich, a wrap or served on a bed of lettuce with the addition of mandarins and strawberries.

Cranberry Chicken Salad

1/2 cup mayonnaise
1/3 cup cranberry sauce*
2 1/2 cup cubed cooked chicken or turkey
1/3 cup red onion
1/2 cup celery
1 teaspoon rosemary
1/2 teaspoon garlic powder
1/4 teaspoon thyme
salt and pepper to taste**

In a large bowl, mix mayonnaise and cranberry sauce. Add chicken, celery, onion and seasoning. Toss together to combine. Cover and refrigerate at least 2 hours. Serve on lettuce, bread or wrap.

*For a delicious and healthy low-glycemic cranberry sauce, see recipe in my cookbook, "Treat Your Health".  If you would like to purchase my cookbook, it is available on Amazon and participating book stores. See my website: treatyourhealth.today for bookstore listings. Make sure to purchase the "Revised Edition" which includes additional information about healthy sweetener options.

**If you have autoimmune disorder that you cannot tolerate black pepper, white pepper is a great alternative.

Everyone have a safe and happy 4th of July!
