Easy & Delicious Fourth of July Picnic Sandwich Spread

If you are looking for a delicious and quick recipe for your 4th of July picnic or when you don't want to turn on a hot oven, here is a wonderful cold chicken salad recipe with lots of flavor. It is a great away to use up leftover chicken or turkey. If you don't have leftovers, a rotisserie chicken from the deli is a great option for when you do not have time or want to cook. This chicken salad can either be eaten as a sandwich, a wrap or served on a bed of lettuce with the addition of mandarins and strawberries.                                                                                                                   

Cranberry Chicken Salad

1/2 cup mayonnaise
1/3 cup cranberry sauce*
2 1/2 cup cubed cooked chicken or turkey
1/3 cup red onion
1/2 cup celery
1 teaspoon rosemary
1/2 teaspoon garlic powder
1/4 teaspoon thyme
salt and pepper to taste**

In a large bowl, mix mayonnaise and cranberry sauce. Add chicken, celery, onion and seasoning. Toss together to combine. Cover and refrigerate at least 2 hours. Serve on lettuce, bread or wrap.

**If you have autoimmune disorder that you cannot tolerate black pepper, white pepper is a great alternative.
