Father's Day will soon be here! Looking for a simple breakfast idea that is delicious and healthy too? Here is a "french toast" recipe that is sure to please dad! By replacing some of the sweetness with sugar substitutes, you will keep the flavor, but lose the excess sugar.
Note: I originally developed my recipes using chicory root prebiotic fiber sweetener. It is very hard to find at this time since one major company is no longer in business. If you would like to use it, Chocoperfection is the only one I know that has it available. It is a pricey item, but in my cookbook "Treat Your Health", I show a way to use it in very small amounts. If you prefer a different sugar substitute, it should work just as well, but may have to adjust the amount since each one contains a different level of sweetness.

Cinnamon French Toast
Serves 2
4 slices light textured bread
2 eggs
1/2 cup milk
1/2 teaspoon vanilla
1/2 teaspoon sugar substitute (your choice)
1/2 teaspoon cinnamon
1/8 teaspoon salt
In a medium mixing bowl, whisk eggs. Blend in milk, vanilla, sugar substitute, cinnamon and salt. Pour into a shallow bowl or pie plate. Dip bread in mixture coating both sides. Fry until golden brown.
Topping: If you need to reduce the amount of sugar further, my tip is to combined low-glycemic brown rice syrup with equal parts of medium-glycemic maple syrup. It is a slower sugar release. If prefer a sugar-free maple syrup, recipes using sugar substitutes and maple extract are another option.
I include a low sugar option for "Blueberry Topping" in "Treat Your Health" that makes a great topping for pancakes and cheese cake as well.
