Quick and Easy Fourth of July Dessert

        



During these hot summer days, if you are looking for a recipe that is quick to make and bake, I have just the one for you! Since having autoimmune, I needed to create one that is gluten-free, dairy-free, egg-free and sugar-free. It's light and delicious so even those who do not have food sensitivities, will love it! A perfect dessert to serve at your "Fourth of July celebrations! Happy Fourth of July!!

Sour Cream Short Cake                                                                                                                       
                                                           
1 egg (replacer)                                
1/2 tablespoon lemon zest
1/4 cup maple syrup        
1/4-1/3 cup sugar substitute (your choice) 
1 1/2 cups gluten-free flour
1 teaspoon baking powder
1/4 baking soda
1/4 teaspoon salt
1/8 teaspoon pure stevia (optional)

Preheat oven to 350 degrees. In a large bowl, mix wet ingredients, set aside. In a medium bowl, mix dry ingredients. Add dry ingredients to wet ingredients. Using 1/4 or 1/3 cup, drop batter on baking sheet to make individual short cakes. Bake for 15-20 minutes.  Check with toothpick at 15 minutes.

Note: If prefer to replace maple syrup with all sugar substitute, omit maple syrup and increase sugar substitute to 1/2 cup.

Fruit Topping

Berries (your choice)
1 tablespoon maple syrup (optional)
Sprinkle sugar substitute, to taste

Mash berries slightly and add sweetener of choice.  

Dairy-free topping can be purchased at local grocery stores.  If you are not dairy-free, you can find the recipe for "Whipped Cream Topping" in "Treat Your Health". ( Available on-line at Barnes & Noble and other retailers.)

To assemble: Place in a single serving dish or parfait glass. Cut short cake and lay side-by-side on serving dish and spoon berries first, add whipped cream and top with more berries.  If prefer to use parfait glass, cut individual short cake and place bottom piece in dish. Spoon berries on bottom piece. On top of berries, place 1-2 spoonful of whipped cream. Place next piece of short cake on top, place one more spoonful of berries and top with a spoonful of whipped cream.
