Low-glycemic Fruit Pizza For Summer Backyard Parties

 


Fruit pizza is always a big hit at any summer party. This lightly sweetened version will not weigh you down! Strawberries, blueberries and kiwi are the usual toppings for this favorite party dessert. If looking for a low-glycemic recipe for the fruit pizza crust, "Treat Your Health Low Glycemic" cookbook has two options that will work great for the cookie pizza crust; the butter cookie dough from the "Mint Chocolate Butter Cookie" recipe or the crust from the "Lemon Bar" recipe.  The "Cream Cheese Frosting" can replace the sugary cream cheese filling, plus you can replace the dairy cream cheese with dairy-free and it works great too.    


If you want to think out-of-the box, try adding edible flowers and other varieties of berries for a more delicate and refined presentation. For example, this version would be a great addition to a beautiful bridal buffet.

If you would like to add a citrus glaze to the fruit pizza, it will add a layer of flavor and sheen, especially good on the traditional fruit pizza shown above.

1/4 cup orange juice

1/2-1 teaspoon lemon juice

1 teaspoon sugar substitute (your choice)

2-3 tablespoons maple syrup

1-11/2 teaspoons arrowroot

Sprinkle salt and pure stevia

In a small saucepan, blend and simmer until thickened. If it becomes rubbery or stretchy, add water to thin. Cool the glaze. With a pastry brush, LIGHTLY dab glaze on to the fruit to prevent the "Fruit Pizza" from becoming soupy.

Note: If the glaze adds too much moisture to the fruit pizza, may want to omit it. If prefer to add it, may want to replace half or all of the maple syrup with more sugar substitute to taste.
