7 Oz. low-glycemic sweetened condensed milk*
1 cup coconut cream
1 teaspoon vanilla
1/4 teaspoon salt
1/4 teaspoon flavored extract (see additions)
Additions: 1/4 cup chopped pecans or walnuts and maple extract, chopped fresh fruit or chopped sugar-free chocolate chips and mint extract. Add after blending.
Place in container and freeze.
Serving suggestions: top with dairy-free whipping cream, low-glycemic chocolate sauce* .
*Note: If unable to find these ingredients, "Treat Your Health" contains low-glycemic recipes for "sweetened condensed milk", "dairy-free whipped cream" and "chocolate sauce". If prefer to use naturally-colored candy sprinkles, these can be found on-line or at your local grocery store.
Tip: If your ice cream has crystalized, remove from freezer to soften and blend in 1teaspoon of neutral-flavored oil. Since this recipe does not contain egg yolks for added fat, it may need another source of fat to achieve a creamy texture.
