Quick & Healthy Ice cream Dessert Ideas

Whether you need a scoop of ice cream to compliment your chocolate dessert or have a craving for an ice cream treat with your favorite flavors and toppings, here is a quick and healthy vanilla ice cream recipe that will not only satisfy those cravings, but diet restrictions too.



Quick Dairy-free Low-Sugar Ice Cream

7 Oz. low-glycemic sweetened condensed milk*

1 cup coconut cream

1 teaspoon vanilla

1/4 teaspoon salt

1/4 teaspoon flavored extract (see additions)                                                                                            

Additions: 1/4 cup chopped pecans or walnuts and maple extract, chopped fresh fruit or chopped sugar-free chocolate chips and mint extract. Add after blending.

Place in container and freeze.

Serving suggestions: top with dairy-free whipping cream, low-glycemic chocolate sauce* .

Tip:  If your ice cream has crystalized, remove from freezer to soften and blend in 1teaspoon of neutral-flavored oil.  Since this recipe does not contain egg yolks for added fat, it may need another source of fat to achieve a creamy texture.
