Watermelon is always a summer favorite, but what do you do when the party is over and you are left with more than you can eat? Instead of throwing it all out, why not make it into something frozen to be eaten when you need a cold treat. I came across a wonderful watermelon sorbet recipe but it contained 1 cup of sugar and needed to be converted into a healthier recipe. This new sugar-free version is a great addition to summer-time meals or as a quick treat!
Sugar-free Watermelon Sorbet
8 cups cubed seedless watermelon
1 cup watermelon juice and/or water
2 tablespoons lemon juice
1 teaspoon lemon zest
1-2 tablespoons sugar substitute, your choice
1/8 teaspoon pure stevia
Sprinkle salt, to taste
In a blender or food processor, blend the watermelon cubes in batches until pureed. Transfer to a large bowl; stir in the juice/water, sweeteners, lemon zest and salt. Pour into a 13 x 9 x 2 pan; cover and freeze for 8 hours or until firm. Just before serving, take out the amount of pureed watermelon mixture desired and blend until smooth. Spoon mixture into dessert glasses. Makes 1-1/2 quarts.
Tip: For a single serving, pour mixture into ice cube trays and freeze. When ready to eat, remove amount of cubes needed. Thaw to desired consistency. Overnight in refrigerator works well. Or if prefer to eat it frozen, pour in a treat mold, insert stick and freeze.
