Funnel Cakes for Food Sensitive Fair Goers

Fair time is here!  Time to enjoy all the fabulous food! One of the most popular foods to eat are funnel cakes. Funnel cakes are crispy on the outside, light and fluffy on the inside and sprinkled with a generous amount of mouth-watering powdered sugar. Who could pass that up; unless you are food sensitive. Try creating your own version at home, with this allergy-free funnel cake that is similar to the original! 

Allergy-free Funnel Cake

3/4 cup gluten-free all-purpose flour
1/2 teaspoon baking powder                                                                                                        
1/8 teaspoon salt
1 teaspoon sugar substitute
1/8 teaspoon pure stevia
1 egg or egg replacer    
1/2 cup dairy-free milk*
2 tablespoons maple syrup**

Neutral flavored oil (your choice) for frying
Powdered sugar substitute (your choice) for sprinkling after frying

In a medium mixing bowl, combine all dry ingredients.  In another medium mixing bowl, combine wet ingredients. Set aside. In a small iron skillet, heat oil on medium-high heat.  Add the mixing bowl of dry ingredients to wet ingredients and whisk until smooth. Using a medium-size funnel, spoon enough batter into funnel to fill the diameter of the fry pan while swirling funnel to help the dough drop into the hot oil.  May need to use a spoon to assist dispensing. When golden brown, flip and fry other side. When both sides are golden brown, place funnel cake on plate covered with paper towel to absorb excess oil.  Sprinkle with generous amount of powdered sugar substitute of choice.

Note: *If batter becomes to thick, thin with a little more milk. 

Option: **If prefer more sweetness, add a little more maple syrup instead of, or in addition to, the milk  for thinning batter.  Also, can replace half of the maple syrup with a dry form of sugar substitute (your choice) or natural sweetener of your choice. Add enough liquid for batter to drop from the funnel.
