School is starting soon and has already begun for some, but not without one more fun summertime adventure! State fair time is here! Time to enjoy some of those favorite fair-time foods. If you have to create your own due to diet restrictions, try this easy "Peach Cream Puff" recipe. Enjoy!
Peach Cream Puffs
1/2 cup water
1/4 cup butter
1 teaspoon sugar substitute (your choice)
1/8 teaspoon salt
1/2 cup gluten-free all-purpose flour
2 eggs or 2 egg substitute*
Filling:
1 pint of fresh peaches
2-4 tablespoons sugar substitute
1 cup dairy-free topping
*May need to add 1 egg yolk or 2 teaspoon of neutral-flavored oil if added fat is needed with the egg substitute.
Directions:
In a large sauce pan, bring to a boil water, butter, sugar and salt. Add flour all at once and stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add eggs one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. Drop 6 rounded tablespoonfuls 3 inches apart onto a greased baking sheet. Bake at 400 degrees for 30-35 minutes or until golden brown. Transfer to cooking rack. Immediately cut a slit in each puff to allow steam to escape and cool. Split puffs and set tops aside; remove soft dough from inside with a fork. Cool puff shells completely. For filling, dice peaches and combine with 2 tablespoons sugar substitute; chill for 30 minutes. To assemble; layer a scoop of whipped topping, then a spoonful of peaches and finish with another scoop of whipped dairy-free cream. Replace the tops. Dust with sugar-free confectioner sugar, (optional). Serve immediately.
