Here is a quick recipe for a wonderful dessert to top off your dinner tonight or if company is coming over. Whether you just finished a batch of canned peaches or have store-bought on the shelf, this dessert can be whipped up in minutes! Also, if you only have frozen peaches on hand, thaw a couple cups and cook on low in it's own juices, just until tender. Follow recipe as directed. Note: If the liquid cooks down a lot, may need to add a small amount of water.
2 cups sliced canned peaches, natural juice
1 tablespoon arrowroot
1 teaspoon sugar substitute, your choice
1/2 teaspoon cinnamon
1/4 teaspoon mace or nutmeg
1/2 teaspoon almond extract
Sprinkle pure stevia, to taste
Drain peaches and place the liquid in a saucepan. Stir in arrowroot, sugar substitute, cinnamon and mace or nutmeg. Sprinkle pure stevia, to taste. Cook and stir over medium-high heat until thickened, about 2-3 minutes. Stir in extract and peaches. Heat through. Serve warm over ice cream. Serves 4-6.
