Sugar-free or low sugar methods for preserving apples

 Harvest time is here! When you have an over-abundance of fruit and you need to preserve it, what method to choose? I usually like to quickly cut up the fruit and freeze them for pie later. I realized I didn't have enough room in the freezer so I had to find other ways. A fun and easy way to make a healthy treat is to dry apple slices or if you are ambitious, applesauce or pie filling is always a wonderful thing to have on hand when needed. As we know, canning recipes require a lot of sugar. If you want a healthier, low sugar option, I have some suggestions for you.

Dried Apple Rings

12-24 apples, according to size

1 cup sugar-free fruit-flavored lemonade

2 tablespoons maple syrup, or to taste

Wash and dry apples. Peel and slice into 1/8 to 1/4 inch width. In a small bowl, add fruit-flavored drink mix and stir in maple syrup. Dip apple slices in lemonade mixture and place on dehydrator trays and dry until feels leather-like. Store in glass jar or sealed baggies in refrigerator.

Note: I suggest as you are slicing each apple, dip them immediately into the lemonade mixture to keep them from turning brown too soon.

Suggestions: To sweeten sugar-free applesauce when serving, sprinkle stevia and cinnamon, if desired, to taste. Can also bump up the sweetness by adding a pinch of salt.
