Chocolate Turtle Candy  

24 low-glycemic soft caramels*

24 pecan or macadamia nuts

1/2 cup sugar-free chocolate chips**

Caramels must be soft when adding the nut on top. Place one nut on top of caramel. Note: If  using macadamia nuts, best if they are cut in half . Add both pieces to caramel. Set aside. Place chocolate chips in pan and melt on low until creamy. With tongs, dip caramel in the melted chocolate, use small spoon to cover top if needed. More chocolate chips may be needed. Place in refrigerator or freezer to harden chocolate.

**Some sugar-free chips contain chicory root fiber sweetener. These chips must be melted on low and no higher. May even take them off the burner while dipping candies, otherwise the chocolate may become dry and crumbly.
