Easy Sugar-free Gelatin

Here is a great alternative to the sweet and artificially-flavored gelatin. It's easy to make and adds healthy nutrition to your diet. As I mentioned on my last blog, this can be an added layer to the top of the "No Bake Cheese Cake Bars"


Sugar-free Gelatin

2 cups fruit juice (your choice), divided

1 tablespoon gelatin (1 packet)

3-4 tablespoons sugar substitute (your choice)

Sprinkle salt, to taste

Sprinkle  pure stevia, to taste


In a medium saucepan, bring to boil 1 1/2 cups juice. In a small bowl, dissolve packet of gelatin in the remaining 1/2 cup of juice. Once dissolved, add gelatin and remaining juice along with sugar substitute, salt and stevia to heated juice in saucepan. Stir to blend. Pour into greased 1 quart pan and chill in refrigerator. If adding fresh fruit, add when gelatin starts to solidify. Serve with whipped cream topping (optional).
