No Bake Dairy-free Cheese Cake Bars

This simple and delicious cheese cake bar is simply perfect for those who cannot have the traditional dairy cheese cake. Even though it doesn't contain dairy, it's still creamy and delicious.

No Bake Cheese Cake Bars

Graham Cracker Crust or Cookie Crust*

Filling:
1/1/2 cups raw cashews (cover with water & soak overnight in fridge)
1/2 cup full-fat coconut milk 
1/3 cup maple syrup**
1/4 cup raw honey
1 teaspoon sugar substitute
3 tablespoons coconut oil (melted)
2 tablespoons lemon juice
1/2-1 tablespoon orange zest
1 teaspoon vanilla
1/2 teaspoon salt

Drain cashews. In a large powerful blender, add cashews, coconut milk, maple syrup, raw honey, fiber sweetener, coconut oil, lemon juice, orange zest, vanilla and salt. Blend until smooth and creamy. Pour this batter into cooled crust and freeze until firm. Store in freezer.

Topping:
Dairy-free whipped topping (See "Treat Your Health" for a low glycemic version)
Jello layer can be added, as pictured. (Next week I will share a sugar-free version)
