Cherry Cobbler Dessert

 If you are looking for a last minute dessert for Valentine's Day, here it is! 

Cherry Cobbler Dessert

 1 can or homemade low-glycemic cherry pie filling*

Crust:

1/2 cup butter

1 tablespoon sugar substitute (your choice)

!/4 cup maple syrup

1/4 teaspoon pure stevia

1 eggs

1 cup flour

1/2 teaspoon baking powder

1/4 teaspoon salt

Pie Filling: 

1 can unsweetened cherries

1/4 cup sugar substitute

2 tablespoons maple syrup

1/8 teaspoon pure stevia

2 tablespoons arrowroot

1/8 vanilla 

1/8 salt

(Marinate in refrigerator over night. Cook in saucepan until thickened, approximately 5-10 minutes. Note: Add more sweetener if cherries are too tart after cooking.)

Icing:

1/2 cup sugar-free powdered sugar

1 tablespoon milk

1/8 teaspoon vanilla

Cream butter  and sugar. Add eggs one at a time. Add vanilla. Combine dry ingredients . Add dry to wet ingredients. ungreased 6 x 9 inch pan, spread 1 cup batter into pan. Spread pie filling over batter. Can use remaining batter to place on top or use all of the batter for the bottom crust. Drop remaining batter by teaspoons evenly distributed. Bake 30 minutes. Cool pan on wire rack. Drizzle icing. Serve with ice cream or dairy-free topping.
