If you are running out of time to make a delicious Easter treat, here is a quick recipe that is fun to make and also sugar-free!
Sugar-free Chocolate Bird Nest
2 1/2 cups gluten-free pretzels, broken in pieces
1 cup sugar-free milk chocolate chips
1/2 cup sugar-free salted caramel chocolate chips*
2 tablespoons cashew butter**
Sprinkle pure stevia, optional
Break up pretzels into approximately 1/2 to 1 inch in length and set aside. In a small saucepan on low heat, melt all the chocolate chips together and stir until smooth. Warm the cashew butter and stir into melted chocolate chips. Sprinkle with stevia if desired. Add broken pretzel pieces. Stir to coat. In small custard cups brush lightly with oil or butter. Form mixture into cup and place in freezer to harden. Once chocolate mixture has hardened, remove from cup and place 3 small candy eggs in the center of the nest. Makes approximately 4 small nests.
*If you do not have caramel-flavored chocolate chips, replacing with all milk chocolate chips will be just as good. Also note: If you purchase sugar-free chocolate chips with chicory root sweetener, only melt on low or it may be come dry and crumbly instead of the creamy consistency you need for coating the pretzels.
**Cashew butter can be replaced with peanut butter or other nut butter of your choice
Note: For a low-glycemic version, add 1 tablespoon of raw honey to the nut butter. Stir to blend and warm before adding to melted chocolate. Proceed with instructions.
