While out shopping I finally found a specialty jam I LOVE. I wanted to replicate the flavor and lower the amount of sweetener. Since this jam includes chia seeds and date sugar, it contains the addition of fiber which helps lower the glycemic index for a healthier addition to your meal.
Strawberry or Raspberry Jam
2 cups fresh or frozen berries*
1/3 cup raw honey
1/4 cup date sugar
1/4 teaspoon pure stevia*
1/8 teaspoon salt**
2 tablespoons chia seeds
1 tablespoon lemon juice
Simmer fruit on medium heat for 10 minutes until softened and liquid is produced. Mash and stir fruit mixture until smooth or contains a few small chunks. Mix in the sweeteners and salt. Add chia seeds and combine well. Cook down to a thick consistency for approximately 20 minutes. Stir in lemon juice. Cool and fill an 8 ounce jar. This jam will keep in the refrigerator for about a week or can freeze for up to 6 months. Since we cannot eat a cup of jam in a week, I like to fill an ice cube tray and freeze. After they are frozen I pop them out of the tray and store them in a freezer bag to be used as needed.
*Options: If you prefer, replace the stevia with 1/2 teaspoon of monk fruit or use 1/8 teaspoon pure stevia and 1/4 teaspoon of monk fruit. Also, if you have other fruit on hand you would like to use, it should also work well. May have to reduce sweetener of choice for sweeter fruits.
**Note: If you prefer less salt, reduce to half the amount or omit.
