Fun To Make Raspberry Thumbprint Cookies

These delicious thumbprint cookies are fun to make. Use a cookie press to make a design or just roll cookie dough into one inch ball and add thumbprint. Makes a great activity for kids to help when it's time to add the thumbprint. These delicious raspberry cookies are great with your favorite cup of coffee or tea! 



Raspberry Thumbprint Cookies

2 cups gluten-free flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 tablespoon sugar substitute (your choice)*
1/4 teaspoon pure stevia
1/2 cup maple syrup
1 cup butter (2 sticks)
1 teaspoon lemon zest
1 teaspoon  pure vanilla extract
1/4 teaspoon almond extract

1/2 cup raspberry jam**

Preheat oven to 350 degrees. In a medium mixing bowl, combine all dry ingredients and set aside. In a large mixing bowl, combine all wet ingredients, not including the jam. Add dry ingredients to wet ingredients and stir to combine. Once dough is made, add to cookie press or roll into one inch ball. Use a little cup of flour to dip thumb when making thumbprint. This will keep thumb from sticking to cookie dough each time. Add approximately 1/2 teaspoon raspberry jam to top of cookie or an amount that fills each thumbprint. Bake cookies for 15-18 minutes.


Tip:  After cookies cool, to add more delicious flavor and decoration, drizzle sugar-free icing over cookies (see icing recipe on a previous blog). Also, if you like to add a chocolate coating on the bottom of the cookies, on low heat, melt sugar-free milk chocolate chips. Keep melted chocolate on burner while frosting cookies to keep it warm and melted. Using a pan that fits in your freezer, place cookies upside down on pan. Using a butter knife, spread melted chocolate on bottom of cookies before cooling. Place pan in freezer for a few minutes to harden chocolate quickly.
