Sugar-free Chocolate Coconut Bon Bon
1 1/2 cup shredded unsweetened coconut
1 tablespoons sugar substitute (optional)
1 tablespoon oat milk
3 tablespoon coconut oil
1/4 cup raw honey + 1 tablespoon
1/2 teaspoon vanilla
1/4 teaspoon salt
1/8 teaspoon stevia
1/4 cup sugar-free semi-sweet chocolate chips
Sprinkle of stevia, optional
If coconut is course, use a food processor to finely chop. Set aside. In a medium mixing bowl, combine next 7 ingredients until well blended. On a small cookie sheet lined with parchment paper, using 1 teaspoon measuring spoon, scoop rounded teaspoon of filling and place on cookie sheet. Freeze coconut filling until firm. In a small sauce pan on low, melt chocolate chips until smooth and add a sprinkle of stevia. Remove melted chocolate from warm burner and dip each frozen coconut filling into chocolate to coat and place bon bon back on parchment-lined cookie sheet. Place back into freezer. Once the bon bon candies have hardened, store in freezer.
