Fall is a fun time to visit an orchard for apples, pumpkins and even pears! I came across a recipe idea for caramel pears drizzled with white and dark chocolate. For added texture and flavor, roll it in pistachio nuts. What a treat and healthy too when using my low-glycemic caramel recipe! (see below)
Caramel and Chocolate Drizzled Pears
4 fresh pears
20 caramels*
1/4 cup sugar-free chocolate chips
1/4 cup sugar-free white chocolate chips
1/4 cup chopped nuts, your choice
Wash and dry four well-shaped pears. Set aside. In a medium saucepan, melt caramels or make homemade caramel sauce to dip or spread on bottom of the pears. If adding nuts, add now while caramel is soft and place in freezer to harden the caramel quickly. Remove from freezer as soon as it hardens. In a small saucepan, melt chocolate chips on low. Using a spoon, drizzle chocolate over pears. In another saucepan, melt white chocolate on low and drizzle over the dark chocolate. As you can see from mine, it doesn't have to be perfect! Place back in freezer to harden chocolate drizzles. Take out and store in refrigerator until served or eat immediately.

Note: Since pears are naturally a sweeter fruit, apples may be preferred. The tartness of an apple contrasts well with the caramel.
