                                Autoimmune Protocol Nachos

Fried hamburger

Gluten-free taco seasoning

Grain-free tortilla chip

Dairy-free cheddar cheese

One small sweet onion (chopped)

Lettuce (shredded)

Dairy-free sour cream

Green olives (sliced or chopped)

Salsa (Cherry salsa option}*


Fry hamburger with or without onions, after meat is browned, add taco seasoning as per package instructions. Chop up all vegetables and olives. Set aside. Arrange tortilla chips in a small glass pie pan and sprinkle cheese over chips. Place in oven to melt cheese. Remove from oven. Add taco meat to chips and cheese. Continue to layer vegetables, first starting with onions, if not fried in hamburger meat. Next, add shredded lettuce, sour cream, green olives and top with salsa. 


*No-Tomato Cherry Salsa

1 can tart cherries 

1 tablespoon raw honey

Sprinkle stevia or monk fruit, if needed

1/4 cup yellow or green onions (chopped)

1 cup carrots, chopped

1/2 cup cherry water

1/4 teaspoon garlic powder

1/2 cup cilantro 

1/4 cup lime juice (or less, if too tangy)

1 teaspoon salt

Using immersion blender, blend to desired consistency
