Having autoimmune sure makes it tricky trying to find fun things to eat, especially when a chocolate lover is sensitive or allergic to chocolate! I love chocolate, but it is no fun when I itch and have joint pain every time I eat it! I was experimenting with carob and this recipe was created. These treats are so good it's addictive! Move over chocolate, a new chew is in town! I tried carob other ways and it just wasn't satisfying as chocolate, but THIS recipe has turned the tables!
Carob Chews
1/2 cup sugar-free white chocolate chips
1/2 cup sun butter
1/4 cup raw honey
2 tablespoon dairy-free butter
1/4 cup carob powder
1/4 teaspoon salt
1/2 teaspoon vanilla
1/2 cup nuts or sunflower seeds
1/2 cup raisins*
Optional: Carob powder for coating**
Melt white chocolate chips on low. Add sun butter, raw honey, and butter. Heat until melted, and mix. Stir in carob powder, salt vanilla, nuts and raisins until forms a big ball like dough. Remove from heat and form each candy into a one inch ball.
*Option: for added tartness, substitute half or all dried cranberries for raisins. Dried fruit can be omitted and add the amount of nuts or seeds desired.
**Tip: I like to roll the "Carob Chews" in carob powder due to the fact the oil can come to the surface while rolling. If prefer, can roll candies in more nuts, seeds, coconut or even gluten-free oats!.
Note: If cocoa is not a problem, it can replace the carob powder in this recipe and also any nut butter can be used.
Sun butter is easy to make in a food processor. Add roasted/salted sunflower seeds to the food processor and to help with the blending processor, neutral-flavored oil can be added. I prefer using avocado oil for it's health benefits.
